This super, super easy (and extremely inexpensive) meal has been one of my favorites since we moved into our new house this past January. Total cost is probably less than $10 and will last you 2-3 nights for dinner meal preps. The best part? You can make it vegan or vegetarian, and use any dipping sauce you want! Adam and I are huuuuuge sauce lovers, so we always have options in our fridge. These Tex Mex egg rolls are perfect for Meatless Monday, and you'll be hooked! Step One: Make the FillingI prefer extra firm tofu, and mild taco seasoning. Cook your tofu for about 10-15 minutes on medium heat, or to your liking. Once the tofu is ready, you'll add just a little bit of the taco seasoning with a little less than 1/4 cup of water. Stir everything, and then rinse your black beans and get your corn ready. Pour your black beans and canned corn into the tofu mix and stir until beans and corn are finished cooking. I use about half the can of black beans, and 3/4 of the can of corn. Then add the rest of your taco seasoning with the remaining 1/4 cup of water. You could also add fresh cilantro to your filling! Step Two: Roll, Roll, Roll it UpPlace your egg roll wrapper diamond-style on a flat surface, and add about 2-3 tablespoons of your filling. Spread it out evenly, and dab the top with water so the egg roll wrapper will stay closed. Yours should look something like mine! Or probably better...LOL. The egg roll wrapper brand I used can be found at most grocery stores! Step Three: Prep Your Air FryerIf you don't have an air fryer, you could try baking these egg rolls on 375 degrees for about 15-20 minutes. Just make sure you check the egg rolls about halfway through so they don't crisp too much! In my air fryer, I cook the egg rolls at 375 degrees for 7 minutes and then flip them over and cook them for another 6 minutes at 350 degrees. This has been the best time concoction so far! Make sure you spray your cooking tray so these bad boys don't stick. Step Four: Cook Your SideOkay so usually I use the Zatarain's Cilantro Lime Rice, but my Kroger was out of it on Sunday. I tried this rice instead and umm. OMG. It's so delicious! I'll definitely be using this rice again in the future. Step Five: Enjoy!I've been using sweet chili sauce to dip my egg rolls in, but any cilantro lime sauce is amazing as well! This delicious recipe takes about 25-30 minutes for me to cook, and then I have dinners for a few nights. I'm obsessed! Leave a comment below if you end up making these!

Happy Sunday, everyone! I don't know about you guys, but Sundays (and Fridays) may be my favorite day of the week. I get to recharge and prepare for a new week, and I get all of my adult-ing done. Sunday Brunch Ride at Cyclebar, grocery shopping, meal prepping, and laundry usually! Then I make sure to save some time for fun stuff like creating blog content! When I am productive on Sunday I know I'm set up for success in the upcoming week.
Are we all managing WFH and quarantining still? Tomorrow will begin week four for me, and I think I'm starting to lose it slightly. Last night I BREEZED through half a season of Girlfriend's Guide to Divorce, and when Netflix asked me if I was still watching I didn't realize I was already on episode four of the fourth season!! Life comes at you fast... Adam worked at the station last night, so I had the house (and bed!!) to myself. Safe to say I was out before midnight. After he got home this morning, we went to Kroger to stock up on groceries for the week. The majority of shoppers, including us, were wearing face masks. I've been pretty creeped out about this pandemic since it started, but seeing people finally start taking precautions makes me more nervous. That sort of brings my fears to life if that makes sense. Kroger also has this Coronavirus infomercial they play, and I swear it made me feel like I was grocery shopping in Gilead. Blessed be the fruit. When we got home, I sanitized our fridge and all the groceries. Then I decided today would be the day when I finally share my secret chocolate chip cookie recipe.
